Kashmiri Sheer Chai

Sheer Chai (Namkeen Chai) also called as Noon Chai is a very common drink in Kashmir. Sheer regers to Sheeera (Kada) that it is made of. It helps in digestion and is useful in throat infections.

Namkeen Chai

Ingredients:

  • Sheer Chai (Paher chai) tea leaves.
  • Green cardam 4-5
  • Salt 1/2 tsp
  • Milk 2 cups

How to make Sheer (Noon) Chai:

Take a pan and add 1 1/2 glasses of water to it.

Turn the flame on.

When water gets slightly warm add the tea leaves and baking soda to the water. Let the water come to a boil.

turn the flame low and let it simmer for around 15-20 minutes till the colour of the water turns dark reddish and the water is reduced a very little.

Add 2 cups of water and 2 cups of milk to the pan.

Add app. (1/4) salt as per taste.

Add 3-4 green cardamoms and let it come to a boil.

Pour the tea in the cups.

Add 1-2 tsp of fresh cream to the cups and it is ready to serve.
