Sago is a type of starch extracted from the stems of certain tropical palm stems. Sago is mainly extracted from Metroxylon sagu, or sago palm. This porridge is made from sago pearls, pearls are often soaked before cooking.

Sago Porridge or Sabudana Khichdi is a traditional dish in India is commonly used during fasting. Here is how to make a delicious Salty Sago Porridge (Khichdi) to treat your taste buds.

Ingredients:
Recipe Specific Ingredients:
Sago: 1 Cup
Potatoes: 2-3 Medium Sized
Peanuts: 1/4 Cup (Roasted)
Spices & Other Ingredients:
Cumin Seeds: 1 tsp
Ginger: 1 Inch
Green Chilies: 2 Nos
Basic Ingedients:
Ghee or Oil: 2 spoons
Rock Salt: 1 tsp
Coriander Leaves: For Garnishing

How to do basic Preparation for making Sago Pudding(Sabudana Kheer):
Clean the sago and soak it into water. Keep it aside for 2 hours.

Heat some oil or (ghee) in a pan.
Add cumin seeds, let them crackle.
Add chopped potatoes and shallow fry them a little. It may take around 5-6 minutes

Add Ginger and Pea Nuts and saute for around 2 minutes more.


Add chopped green chilies, Salt Turmeric Powder and Red Chilly powder and mix well.

Add the Sago Pearls and mix well. Cook for 3-4 minutes.

Add some coriander leaves and mix well.

Switch the flame off and dish it out.

It is ready to serve.
