Kadai Paneer

Kadai Paneer is one of the famous dishes of India, cooked with capsicum and tomatoes.

ingredients:

Recipe Specific Ingredients:

Cottage Cheese: 500 Gms

Capsicum : 2 medium sized

Tomatoes: 4 medium sized

Onions: 4 medium sized

Spice Ingredients:

Asafoetida: 1 pinch

Cumin Seeds: 2 tea spoons

Turmeric Powder: 1 tsp

Ginger Powder: 1 tsp

Fennel Powder: 2 tea spoons

Coriander Powder: 1/2 tsp (Optional)

Pepper Corn: 1 tsp

Big Cardamom: 3-4 Pieces

Cinnamon: 1 piece of 1 inch

Basic Ingedients:

Salt: 1 tsp (as per taste)

Red Chilly Powder: 1 tea spoon

Mustard Oil: 2-3 spoons

How to do basic preparation for making Kadai Paneer:

Roast Fenugreek seeds 2 tsp, 1 tsp cumin seeds, 1 tsp black pepper corns and 2 red chillies. Grind it to coarse powder.

Chop two medium sized onions to small pieces for gravy.

Cut two onions into slices for Kadai Paneer.

Prepare the tomato puree with 2 medium sized tomatoes.

Grind 1 tsp of Pepper Corns. 1 inch cinnamon stick and 3-4 big cardamom to fine powder.

How to make Gravy:

Heat some oil (1 spoon) in a pan.

Add 1 tsp cumin seeds and saute well.

Add 2 medium sized chopped onions and saute it well till they are translucent.

Add 1/2 tsp turmeric powder, 1/2 tsp coriander powder, 1/2 tsp ginger powder, 1/2 tsp red chilly powder and mix it well.

Add tomato puree and mix well. Simmer it till oil starts separating.

Turn the flame off and keep it aside.

How to cook Kadai Paneer:

Heat 1 1/2 spoons of oil in a pressure cooker.

Add a pinch of asafoetida, 1 tsp cuimin seeds, 2 tsp ginger and garlic paste and mix it well.

Add diced onions and capsicum and mix well.

Add the cottage cheese and mix well. Simer it till cheese turns little brownish.

Add 2 medim sized diced tomatoes and mix it well.

Add 1 tsp salt, coriander powder, 1/2 tsp turmeric powder, 1/2 tsp chilli powder and mix it well.

Add the grinded masala and mix well.

Add the tomato gravy that we made.

Add 1/2 glass of water and let it come to a boil.

Cover it and simmer it for some time. Adjust the gravy as per your choice.

Add green coriander leaves and mix well.

Turn the flame off. Cover it and leave it for some time.

Dish it out to a serving bowl.

Garnish it with Green Coriander leaves

Serve hot. It goes well with Chapatis and rice both.
