Baingan Ka Bharta

Baingan ka bharta is made of roasted eggplant (brinjals) and other spices giving a distinctive flavor and taste. Its smoky tinge is what makes it so unique. This roasted and mashed is very popular in India. Large Brinjals are roasted on direct flame of charcoal or gas and then mashed and then cooked with onions, tomatoes and magic of India spices.

Baingan Ka Bharta

Baigan bharta is made of roasted eggplant and other spices giving a distinctive flavor and taste. Its smoky tinge is what makes it so unique.

Ingredients:

Recipe Specific Ingredients:

Large Brinjal: 3 Nos.

Onions: 2 medium sized

Tomatoes: 2 medium sized

Spice Ingredients:

Asafoetida: 1 pinch

Cumin Seeds: 1 tea spoon

Turmeric Powder: 1/2 tsp

Ginger Powder: 1 tsp

Fennel Powder: 1 tea spoons

Coriander Powder: 1/2 tsp (Optional)

Basic Ingedients:

Salt: 1 tsp (as per taste)

Red Chilly Powder: 1 tea spoon

Mustard Oil: 1-1 1/2 spoons

How to select right Brinjals:

First check the brinjals from all sides for any holes. Presence of holes may be due to worms inside.

The brinjals must be lighter in weight. Heavy brinjals have more seeds.

Brinjals should be of medium size. Too large in size will again have more seeds.

How to roast Brinjals:

Method 1: Put some cuts on the brinjal and roast it in an oven for 25-30 minutes at 180 degrees.

method 2: Heat some charcoal and roast the brinjals on the charcoal

Method 3: Roast the brinjals on a gas stove using a perforated stand.

How to do basic preparation for cooking Baingan ka Bharta:

Let the roasted brinjals cool a bit and then remove the skin.

Cut the peeled brinjal into large slices and check for any worms. If foud please discard the whole brinjal.

If everything is okay chop it further and mash it.

Chop the onions into small pieces

Chop the tomatoes into small pieces.

How to make Baingan ka Bharta:

Heat 2 spoons of oil in a pan.

Add a pinch of asafoetida and 1 tsp of cumins and saute them.

Add chopped onions and saute them till they turn golden brown.

Add chopped tomatoes and mix well.

Add 1/2 tsp of turmeric powder, 1/2 tsp ginger powder, 1 tsp of fennel powder and 1/2 tsp of coriander powder, 1 tsp salt and 1 tsp of chilly powder to it and mix well. Saute till you see oil coming to the surface and tomatoes are cooked.

Add the mashed brinjal and mix well. Cook for around 5 minutes on low heat till brinjals are cooked. Keep stirring inbetween.

Add the chopped coriander leaves and mix well.

Turn the flame off and leave it for 5-10 minutes.
