Rice pudding (Chawal ki Kheer) is made from rice and milk and other ingredients such as dry fruits, cinnamon and green cardamoms and resins.

Variants are used for either desserts or dinners. When used as a dessert, it is commonly combined with a sweetener. Enjoy it hot or cold. I like the cold one. Watch the video above for complete recipe.

Rice Pudding

Ingredients:

Recipe Specific Ingredients:

Rice: 1 Cup

Milk: 2 Liters

Dry Fruits:

Almonds: 10-12

Cashews: 10-12

Pistachios: 12-15

Raisins: 12-15

Other Ingredients:

Sugar: 1/2 Cup

Saffron: 5-7 Strands

Large Cardamoms: 4-5

How to do Basic Preparation for Rice Pudding:

Clean the rice and soak it for around 30 minutes.

Chop cashew nuts and almonds.

Open green cardamom pods and crush the seeds to fine powder.

Soak the saffron strands in little water or milk for around 30 minutes

How to Make Rice Pudding (Chawal ki Kheer):

Pour milk into a deep pan and bring it to a boil and keep cooking till it is reduced to half.

Add rice, mix well and cook on medium heat, stirring continuously, for 15-20 minutes till the rice is half cooked.

Add sugar and mix till sugar dissolves and further cook for 1-2 minutes. Add green cardamoms, chopped nuts, and raisins and mix well. Cook for 1-2 minutes.

Add saffron water, mix and reduce the heat to low and cook till mixture thickens.

Transfer into serving bowl and serve either hot or cold.
