Kaddu (Pumpkin)

Ingredients:

Recipe Specific Ingredients:

Pumpkin: 750 Gms

Spice Ingredients:

Asafoetida: 1 pinch

Cumin Seeds: 1 tea spoon

Turmeric Powder: 1/2 tsp

Fennel Powder: 2 tea spoons

Pepper Corn: 1 tsp

Big Cardamom: 2-3 Pieces

Cinnamon: 1 piece of 1 inc

Basic Ingedients:

Salt: 1 tsp (as per taste)

Red Chilly Powder: 1 tea spoon

Mustard Oil: 2 spoons

How to Prepare for making Pumpkin:

Clean the pumpkin, peel it and chop into small pieces.

Grind 2 large cardamoms, 1 inch cinnamon, 1 tsp pepper corns to fine powder.

How to cook Pumpkin:

Heat some oil (1 spoon) in a pan.

Add a pinch of asafoetida, 1 tsp cumin seeds and saute well.

Frying Pumpkins in a pan

Add the pumpkins to the pan and shallow fry it. keep stirring till golden brown.

Add 1 tsp salt, 1 tsp red chilly powder, 1 tsp fennel powder, 1/2 tsp turmeric powder and mix well.

Add 1/2 glass of water and mix well.

Add grinded spices and mix well again.

Cover the lid and simmer it for 4-5 minutes.

It is ready to serve.
