Ingredients:

Recipe Specific Ingredients:

Basmati Rice: 2 Cups

Ghee : 1 spoon

Vegetables: Cauliflower

Carrot

Beans

Peas

Cottage Cheese

Spices:

Asafoetida: 1 pinch

Cumin Seeds: 1 tea spoon

Fennel Powder: 2 tea spoons

Pepper Corn: 2 tsp

Big Cardamom: 5-6 Pieces

Green Cardamom: 3-4 Nos.

Cinnamon: 2 piece of 1 inc

Cloves: 3-4

Bay Leaves: 3 Nos

Saffron: few strands

Basic Ingedients:

Salt: 1 tsp (as per taste)

Red Chilly Powder: 1 tea spoon

Mustard Oil: 2 spoons

How to do basic preparation:

Clean and cut the vegetables into small equal pieces.

Cut the cottage cheese into small pieces and fry them.

Grind 1 piece of cinnamon, some pepper corns and 3-4 big cardamoms to coarse powder.

Soak few strands of saffron in little water.

How to cook vegetables for pulao:

Heat some ghee (clarifies butter) 1 spoon app.) in a pan. Add 1 tsp cumin seeds and1 piece of cinnamon, 2-3 big cardamoms, 1 tsp black pepper, 2 bay leaves, 2 cloves and 3 green cardamoms and saute them.

Now add cauliflower, beans, carrots and shallow fry it. shallow fry it. Shallow fry the vegetables.

When vegetables are half done add green peas. Green peas take lesser time so add them after some interval when other vegetables are almost half done.

Add some salt (1/2 tsp) and mix it well.

Turn the flame off and keep it aside.

How to cook Pulao:

Take a rice cooker and add Basmati rice to it. Add water as you would normally add while making rice. For two cups of rice I have added 4 glasses of water.

Turn the switch on and cover the lid of the cooker.

When it is half done add the fried vegetables, cheese and mix well.

Add the grinded spices to it.

Next add the saffron water and mix well. Be gentle else rice does not break. (saffron is not added directly. Soak it in little water for around half an hour)

Cover and let it cook.

While Basmati rice has its own aroma, spices added will enhance its taste and aroma. Saffron gives it a nice texture along with a beautiful aroma. Saffron will give it a good texture and aroma

When rice gets cooked your Pulao is ready.

Serve it hot along with yoghurt and some nice pickles.
