Roganjosh is a traditional Kashmiri cooking style. Rogan josh is typically little spicy and its red texture comes with Kashmiri Red Chilly which is less bitter but gives a good colour. Roganjosh is best suited for special occasions with a rich aromatic gravy. Here I show you how to make Mushroom Roganjosh. Watch the video for complete recipe. Roganjosh is well worth the effort.

Ingredients:

Recipe Specific Ingredients:

Mushrooms: 400 gms

Spice Ingredients:

Asafoetida: 1 pinch

Cumin Seeds: 1 tea spoon

Turmeric Powder: 1/2 tsp

Fennel Powder: 1 tea spoons

Ginger Powder: 1/2 tea spoon

Coriander Powder: 1/2 tsp (Optional)

Pepper Corn: 1 tsp

Big Cardamom: 3-4 Pieces

Cinnamon: 1 piece of 1 inch length

Cloves: 3-4

Basic Ingedients:

Salt: 1/2 tsp (as per taste)

Red Chilly Powder: 1 tea spoon

Mustard Oil: 2 spoons

How to prepare to make Matar Mushroom recipe:

Clean and wash the mushrooms and cut them into medium pieces.

Grind one stick of cinnamon, 3-4 Big cardamoms and 1 tsp of pepper corns to powder.

How to cook Mushroom Roganjosh:

Heat some oil (2 spoons) in a pan.

Add a pinch of asafoetida, and 1tsp of cumin seeds and saute them well.

Add chopped mushrooms and let it fry till the water is dried up and Mushrooms turn medium brown.

Add 1 inch Cinnamon, 3-4 Cloves, 2 Large Cardamoms and 2 Bay Leaves and saute them well.

Add 1/2 tsp of turmeric powder, 1/2 tsp coriander powder, 1/2 tsp ginger powder, 1tsp fennel powder, 1 tsp Kashmiri Red Chilly powder and 1/2 spoon Salt and mix well.

Add little water so that the spices don’t burn.

Simmer for 2-3 minutes till spices are mxed well and cooked.

Add 1 glass of water and mix well. Cover the lid and simmer for 5-7 minutes.

Now add Grinded spices (Cardamom, Cinnamon and Black Pepper) to it and mix it well. Simmer for another 2-3 minutes and turn off the flame.

Dish it out and garnish with green coriander leaves.

Mushroom Rohan Josh is ready to be served. It goes well with chapatis and rice equally.
