Ingredients:

Recipe Specific Ingredients:

Carrots: 3 Kgs

Full cream Milk : 3 Liters

Sugar: 400 gms

Dry Fruits Ingredients:

Almonds: 1 tea spoon

Cashews: 1/2 tsp

Pistachios: 1 tsp

Basic Ingedients:

Big Cardamoms: 8-10

Ghee: 3 spoons

Saffron: 10-12 strands

How to do the basic preparation:

Clean and peel the carrots. Wash them and grate them

Chop the dry fruits.

Grind cardamoms to fine powder.

Soak the saffron in some milk in a bowl.

How to make Gajjar ka Halwa:

Boil the milk in a pot on low flame till it reduces to half. Keep stirring in between else it can stick to the bottom and will give it aa bad taste.

Now take a pan and add clarified butter (3-4 spoons) or Ghee to it. Keep the flame low.

Add the grated carrots to the pan. Keep stirring till water dries out.

Add the milk to the pan and mix well.

Simmer it for another 30 minutes on low flame, till milk is almost soaked/dried.

Add the saffron milk and cardamom powder.

Add the sugar and mix well. Add the sugar only after the carrots have become tender. Keep stirring till sugar absorbs well.

Add the chopped dry fruits. Dry fruits should be added in moderate quantity . Don’t overload with them.

Simmer for some time more.

Turn off the flame and keep it covered for anther 20-30 minutes.

Dish it out and garnish with dry fruits. It is ready to serve.
